Egg Bites - Easy and under 100 Calories

Some days come with sweet, sweet surprises. Last week I had, honestly, the best professional interview, ever. Six phone calls, face-to-face interviews and a practical later, I have an amazing opportunity to grow my career with Lifetime Fitness in Upper Arlington. By the way - if you guys are reading this, I love you already! Slightly sidetracked here…but anyways. I walked out of my first interview and while smitten with the gym, had an overwhelming amount of information and simply wanted to treat myself and let my brain unwind. So, I went to Starbucks right across the street. This is where it gets good… and I got egg bites. HA! I know, no fru-fru latte, no pound cake; just egg bites. Choices aside, if you haven’t had them yet, you should try them. Very tasty tiny little morsels of breakfast yum.

I got home and wondered why I never put my eggs in muffin pans. Why? That sounds so smart. Ironically, two days later, a client messaged me she had a genius idea; to put her eggs in muffin tins!

So there I was, cracking 20 eggs to dump the yolks and make my egg muffins. But I realized very quickly the texture would not be the same as my Starbucks snack. I curiously googled the velvety texture of the eggs!

Turns out they are Sous vide Egg Bites. I had no idea that ‘sous vide’ was an adjective to describe them! After further googling, sous vide, means “under vacuum” in French and refers to the process of vacuum-sealing food in a bag, then cooking it to a very precise temperature in a water bath. This technique produces results that are impossible to achieve through any other cooking method.

Well, at that point I realized I would not be completely mimicking the Starbucks treat, rather a completely different breakfast item. Which, was fine, but not the same, lol.

These were still great and a super easy way to have your breakfast ready in a jiffy for your busy mornings.

Also - for this batch, I added five slices of turkey bacon and 1/2 shallot. I just threw it in a pan and lightly sautéed it.

20 egg whites

5 slices finely sliced and sauteed

100 grams rolled oats, raw


Whip egg whites with hand blender or kitchen aid

Fold in oats and bacon

Pour into 12 muffin tins

Bake at 350 for 20-30 minutes until they don't jiggle

Serving size: 1 bite

Calories: 75

Carbs: 6 grams , Fat: 2 grams, Protein: 8 grams
